Materials:

-3 eggplants
-2 zucchini
-1 red bell pepper
-1 tomato
-1 pinch of salt
-1 pinch of black pepper
-1 tablespoon of olive oil
-1 clove of garlic

How is it done?

-Cut the zucchini and aubergines into rings. Grease the pan with olive oil.
– Chop the garlic into rings.
-Put the zucchini and aubergines in the heated pot and stir-fry them. Add the red peppers by cutting them into rings.
-Peel the skins of the tomatoes and grate the peeled tomatoes.
– Pour the grated tomatoes over the roasted zucchini and aubergines and add the spices.
-Cook for about 20 minutes on low heat with the lid closed.
-Serve with yogurt.

bean fries

Materials:

-500 grams of string beans
-2-3 tablespoons of flour
-1 teaspoon salt
-3/4 cup of oil

How is it done?

-First, wash the beans and remove the stems, then take the beans whole without breaking them into a deep pot and boil them in salted water for about 10 minutes, until the beans are soft.
-Strain the boiled beans and rinse with cold water.
– Take the oil in a frying pan and heat it.
– Sprinkle flour on a tray and dip the warm beans one by one into this flour and throw them into the hot oil, after frying them by turning them upside down, transfer them to a plate lined with paper towels and let the excess oil drain.
-After frying all the beans in this way, take them on a serving plate, drizzle with yogurt with garlic, garnish with dill and serve.
-You can serve it with yoghurt and dill sauce.

Tuna Pasta

Materials:

-1 pack of pasta
-200 grams of canned tuna
-2 tablespoons of olive oil
-6 cherry tomatoes
-1 clove of garlic
-1 cup of boiled corn
-1 cup of black olives
-1/4 bunch basil
-1 teaspoon of capers
-1 teaspoon of salt

How is it done?

– Cook the pasta in boiling water for about 8-10 minutes. Reserve 1 tea glass of boiling water to use in the sauce. After draining the pasta, keep it aside.
-For the sauce of tuna pasta; grate the garlic. Finely chop the capers and basil. Cut the cherry tomatoes in half down the middle.
– Heat the olive oil in a saucepan. Fry the chopped cherry tomatoes and grated garlic for 2 minutes.
-Add the drained can of tuna fish and cook the sauce until the tomatoes get juiced.
-Then, respectively; Add boiled corn, black olives, chopped basil and capers, salt and pepper. Add the portion you have separated from the boiling water and bring the sauce to a boil.
– Mix the boiled pasta and tuna fish in the pot. Serve hot without waiting. Share with your loved ones.

Bean dish with vegetables

Materials:

-2 cups of kidney beans
-1 red onion
-1 carrot
-2 tomatoes
-1 red pepper
-1 pack of tomato puree
-1 tablespoon of chili paste
-3 cloves of garlic
-3-4 sprigs of spring onions
-2 celery stalks
-1 teaspoon of olive oil
-1 teaspoon of black pepper
-1 teaspoon ground red pepper

How is it done?

– Finely chop the onion. Chop the tomatoes, carrots and peppers into small cubes as well. Grate the garlic.
-Transfer half of the olive oil into a saucepan and add the onions and sauté.
-Then add the carrots and peppers and continue sautéing.
-Add the sorted and washed kidney beans, tomato paste, tomato and tomato puree and mix well.
– Add 1 glass of water to it. Let it cook on low heat.
– When the kidney beans start to soften, add the celery stalks in small pieces. Add salt and spices and mix.
– Take it off the stove and let it rest for a few minutes, then add the fresh onions and mix it. Allow to cool at room temperature.
-After it has cooled, add the rest of the olive oil on it and serve.
