Chickpea Salad Recipe – Practical Recipes

Ingredients for Chickpea Salad:

  • 2 cups chickpeas
  • 1 teaspoon salt
  • 1 red paprika pepper
  • 5 green onions, chopped
  • Half purple onion, cut as piyaz
  • 4 chopped pickled gherkins
  • ½ cup chopped parsley
  • ½ cup chopped arugula
  • 1 teaspoon sumac
  • 5 tablespoons of olive oil
  • 3 tablespoons of pomegranate syrup or juice of half a lemon
  • 1 teaspoon of black pepper
  • 1 teaspoon red chili powder
  • 1 teaspoon of salt

Making the Chickpea Salad:

Put the chickpeas in water the night before and after washing them, put them in the pot.

After adding the chickpeas to the top, add the salt and let it boil.

After the chickpeas are well softened, remove them from the stove, drain the water and keep them under cold water.

After the boiling temperature of the chickpeas is gone, add olive oil, pomegranate syrup and vinegar and mix well.

After cutting the peppers and pickled gherkins into small pieces, cut the onions in the form of piyaz. Then finely chop the green onion, parsley and arugula. After adding all these ingredients to the chickpeas, add the spices and mix well.
