Circassian Chicken – Practical Recipes

Circassian chicken
- 1 whole chicken, diced
- 1 onion
- 2 cups crushed walnuts
- 2 cloves of garlic
- 3 slices of stale bread
- 1 teaspoon red pepper
- 1 teaspoon of salt
Boil the chicken with the onion in four glasses of water. Onions won’t work for us later; We only use it for flavoring.
We drain the boiled chicken, shred it when it’s warm, and separate it from the bones. We do not throw away the chicken broth and use it to wet the breads. We dip the breads in water and take them out. We can use the remaining chicken broth by making soup or rice.
We mix the bread soaked with crushed or crushed walnuts, crushed garlic and red pepper in the robot. We leave this mixture for half an hour, then put it in a cheesecloth and squeeze it. You will see that the walnut oil comes out. We set aside the oil that comes out and mix the walnut mixture remaining in the cheesecloth with the chickens. You can add salt and thin it with 1-2 tablespoons of chicken stock if the consistency is too thick.
We take the Circassian chicken on a serving plate and pour some of the walnut oil that we have squeezed with cheesecloth on it. If you mix this walnut oil with a little red pepper and pour it, it will be more colorful. Finally, we decorate with walnuts. We serve when it’s cold. Enjoy your meal.
Note; Some ladies use strained yogurt and mayonnaise for Circassian chicken. But it is a completely different recipe. Absolutely unusable. The truth is as I described above,
