Colorful Potato Balls – Practical Recipes
Colorful Potato Balls
- 1 kg of potatoes
- 1 jar of pickled beetroot (we used ready-made)
- 2 large carrots
- a few sprigs of green onions or dill
- juice of 1 lemon
Colored Potato Balls Recipe and Preparation:
Potatoes are boiled and mashed. Squeeze a lemon into it and add 2 tablespoons of olive oil. Add salt and pepper and cut the potatoes into thirds. Let the potato cool a bit, or you may burn your hand.
The juice of the grated beet is squeezed and the beets are added to one of the separated potatoes. Small balls are made by kneading until the color is homogeneously mixed. Finely grated carrots are added to some of the potatoes after the juice is squeezed and the same process is applied. I squeeze the juice of the carrot into a glass and drink it 🙂
Chopped dill or onion is added to the remaining potatoes and balls are made and the salad is ready to be served.
