Couscous Salad with Purslane Recipe
- half a pack of couscous
- 1 bunch of purslane
- 2 cucumbers
- 3 cloves of garlic
- 250 g yoghurt
Purslane is roasted in a little oil and cooked until the water is absorbed. Cucumber, optionally canned corn and boiled couscous are added to the garlic yogurt and mixed. It is served with mint and red pepper on top. Enjoy your meal…
