First, we start by boiling the potatoes. While the potatoes are being boiled, we take our bulgur with meatballs into a deep bowl and add the grated onion, lemon, oil, garlic beaten in a mortar, tomato paste, lemon juice and spices. We pour a little hot water on it and close the lid and wait for it to swell. (but this is not like sterile, if you put too much water, it will be sterile. The reason for adding less water is to mix the smell and taste of the spices into the bulgur) We grate the boiled potatoes while they are hot and mix them into the bulgur.
