Eggplant Salad with Meatballs Recipe

  • 1 pack of unsalted meat
  • 3 medium eggplants
  • 2 cups of yogurt
  • 2 cloves of garlic

For the tomato sauce:

  • 4 tablespoons of olive oil
  • 3 medium tomatoes
  • 1 clove of garlic
  • 1 tablespoon of vinegar
  • 1 piece of cut sugar
  • salt, little pepper

For the above:

  • 2 red roasted peppers
  • Mint, chili pepper

Deep fry the eggplants by peeling them and dicing them.

Take the fried eggplants on a paper towel and drain the oil.

Peel and grate the tomatoes. Lightly sauté 1 clove of garlic in olive oil, add tomato, vinegar, salt, sugar and a little black pepper on it, cook the sauce. Smash the meat into large pieces in your hands and place them on the bottom of the serving plate. Pour the fried eggplants and tomato sauce on it and turn it upside down. Mix the yogurt with 2 cloves of garlic and salt and pour over the eggplants. Cut the roasted peppers into long strips and place them on the yogurt, garnish the gaps with mint and chili peppers and serve.

NOTE: Even if it is made hours in advance, the skirts do not deteriorate or look ugly, they are even more beautiful, I recommend them to everyone.
