Roasted Eggplant Salad

  • 4 Pieces Eggplant
  • 2 Pieces of Red Pepper
  • 2 Cloves of Garlic
  • 4 Tablespoons of Olive Oil
  • 2 Tablespoons of Lemon Juice
  • Salt

Roasted Eggplant Salad Recipe and Preparation:

Let’s take the peppers and eggplants that we have made small scratches on the embers pan or the baking tray and roast them by turning them on all sides.

Let’s put the cooked peppers and eggplants in a transparent bag or paper bag and close the mouth.

This will make the skins peel off more easily.

Let’s take the peeled eggplants on a cutting board and mash them with a knife or fork.

Let’s crush the garlic and announce it to the eggplant, mix it and take it to the serving plate.

In the same way, let’s chop the peppers that we have peeled and divide them around the eggplants as in the picture.

Finely chop the parsley and decorate it. Let’s squeeze the juice of 1 lemon and mix it with plenty of olive oil and pour it over the salad. Enjoy your meal
