Stuffed Sirdan Recipe

WHAT IS SIRDAN?
Şırdan is one of the 4 stomachs of the sheep. It is prepared by cleaning, stuffing spicy rice, planting it and cooking it. It is somewhat unusual in shape. When eaten, sprinkle salted cumin and chili pepper on it. It is the local food of Adana. Although it is referred to as Şırdan, its real name is “Şırdan dolma”.

Materials

  • 5 lamb mustards
  • 1 soup bowl of rice
  • 2 medium size tomatoes
  • 2 medium onions
  • Small bowl of finely chopped lard
  • 1 coffee cup of oil
  • 1 pinch of parsley
  • 1 pinch of mint
  • 1 tablespoon of tomato paste
  • Plenty of black pepper, paprika, cumin and salt

    Fabrication

    Rub the mustards with plenty of salt and wash them with plenty of water. Soak in lemon and salt water for a few hours and repeat the cleaning process.

    To prepare the stuffing, peel and finely chop the tomatoes. Chop the onion, parsley and mint too. Wash the rice in plenty of water and add the tallow. Add tomato paste, spices and vegetable oil and mix well.

    Fill the inside of the syringes that you have cleaned thoroughly and sew them up. In a large pot, put the mustards and add enough water to cover them. Check with a fork while cooking. When the rice is cooked, you can take it from the fire. Serve with plenty of pepper and cumin.
